Mike and I are trying to eat healthy during the week but I get bored of eating the same thing. When I saw this stuffed bell pepper recipe on Lauren Conrad's blog I knew it would be a healthy way to try something different and have some variety. Below are some pictures of how they turned out:
It's really rare that I follow a recipe exactly so I did change it a little. I added a can of black beans and diced up a can of mexican seasoned stewed tomatoes instead of using cherry tomatoes. For the sausage I used hot turkey sausage. Mike topped his with hot sauce and siracha and I topped mine with a little siracha sauce. They were really good and I will definitely be making these again!
